If you've ever wondered why tandoori cooking is so rich and flavorful, here is your answer: the tandoori oven. Dishes like Naan, Chicken Tikka, Tandoori Chicken, Tandoori Lamb, Prauns, Sheekh Kabab, and many vegetarian dishes cannot be made without a tandoor.

The tandoor is a large clay jar with an opening at the bottom for adding and removing fuel. Once our tandoors are completely made out of "chikni mitti" (meaning clay optimally nurtured for authentic tandoori cooking), a paste of mustard oil, jaggery, yogurt and ground spinach is rubbed in the inside to harden it up.
